This was lunch for one person, but I have to admit, I made another batch right after I ate the first. I love how the flavours come together in this salad. I'll be posting some more dandelion green recipes soon, as this IS an inspirational wild edible that can make a healthy version of fast food.
Here's what you need:
Chop and combine all ingredients. Dress with olive oil, your wild vinegar of choice (or plain apple cider vinegar or lemon juice) and tamari (or add some sea salt). Enjoy.
Here's what you need:
- a bunch of fresh dandelion greens
- one shallot (or use spring onions)
- 2 stems of green celery
- 1/2 red bell pepper
- zest of one lemon (organic of course)
- a few (I used three) artichoke hearts
Chop and combine all ingredients. Dress with olive oil, your wild vinegar of choice (or plain apple cider vinegar or lemon juice) and tamari (or add some sea salt). Enjoy.
